Cream together the sugar and the butter.

Add in the eggs and continue to beat until fluffy.

Stir in the eggnog and the vanilla.

In a separate bowl, mix together the dry ingredients.

A cup at a time, mix the flour mixture into the butter mixture.

Cover the bowl and refrigerate for half an hour.

Preheat oven to 350 degrees F.

Working with half of the dough at a time, roll it out to about 1/8 inch thick on a lightly floured surface.

Use cookie cutters to cut your shapes.

Bake for 7-10 minutes, until cookies are a light golden colour.

Remove to a baking rack to cool.

You can eat them as is (they are scrumptious!) or decorate with icing and sprinkles.

If you want to ice them, beat 1/4 cup of butter until fluffy. Mix in 3 cups of icing sugar - I find it easiest to add in 1 cup at a time and beat until well incorporated. Blend in 1/3 cup of eggnog until smooth.
