Eggnog Cookie Recipe

The taste of the season in a cookie - these eggnog cookies are going to delight friends and family this holiday season. They're one of Santa's favorites!

Ingredients

  • 2 cups sugar
  • 1 cup butter softened
  • 2 eggs
  • 1/3 cup eggnog
  • 1 tsp. vanilla
  • 4 cups flour
  • 1 tsp. nutmeg
  • 2 tsp. baking powder

Instructions

  1. Cream together the sugar and the butter.
  2. Add in the eggs and continue to beat until fluffy.
  3. Stir in the eggnog and the vanilla.
  4. In a separate bowl, mix together the dry ingredients.
  5. A cup at a time, mix the flour mixture into the butter mixture.
  6. Cover the bowl and refrigerate for half an hour.
  7. Preheat oven to 350 degrees F.
  8. Working with half of the dough at a time, roll it out to about 1/8 inch thick on a lightly floured surface.
  9. Use cookie cutters to cut your shapes.
  10. Bake for 7-10 minutes, until cookies are a light golden colour.
  11. Remove to a baking rack to cool.
  12. You can eat them as is (they are scrumptious!) or decorate with icing and sprinkles.
  13. If you want to ice them, beat 1/4 cup of butter until fluffy. Mix in 3 cups of icing sugar - I find it easiest to add in 1 cup at a time and beat until well incorporated. Blend in 1/3 cup of eggnog until smooth.
