Hmm. I don’t have much of an update this week. We honestly haven’t done much out of the ordinary. Walter is doing well and growing like a weed. Seriously. He outgrew quite a few outfits pretty much overnight! I can hardly believe that we’re less than a month away from his first birthday.
He has tried a few new foods and is pretty accepting of most of them (except watermelon, tomatoes, and mushrooms). This week’s favorite is the baked avocado fries his mom made for him. I tried them too and boy are they tasty!
Other than that, he has decided that I’m his personal playmate and jungle gym. One of his favorite things is for me to get down on the floor and play with him. Walter even likes it when I lie down on the floor because then he can crawl all over me. And no, I have no complaints about it!

Wednesday
Pork tenderloin with pomegranate sauce (FF), couscous, spinach, corn
Thursday
Chicken and rice casserole, Brussels sprouts, peaches
Friday
30 minute Sheet pan fajitas, tortillas, mixed fruit salad
Saturday
Super simple supper: Grilled cheese, tomato soup, raw veggies and dip
Sunday
Super Simple Dinner: Overnight breakfast strata (FF) – yes, breakfast for dinner! Bacon. Leftover mixed fruit salad.
