It’s Spring Break here and boy oh boy, is this break welcome! I dearly love taking care of Walter during the day while his parents work but I plan on taking some time this week to sleep in and to get caught up on some work. It’s also my birthday this week and apparently, there are some birthday surprises to come!
It’s funny because I’ve reached the age where I honestly don’t immediately remember my age. I’m not kidding! I know that I’m over 55 and I’m not yet 60 but the rest doesn’t seem to matter anymore. I always have to pause and do the math every time. Remember when it was such a big deal – turning 13, 16, 18, 21, 30, 40?? So many milestones! It’s not that my birthday is no longer special to me. It’s just that I’ve hit an age where I’m no longer concerned about age. I’m all about embracing joy every single minute that I’m still here on earth!

Fridays are now ALWAYS going to be meat-free until Easter. I’m also planning extra simple meals on Saturdays and Sundays so that we truly can take a Sabbath and spend some time focusing on family and fun!
This Week’s Meals
You will find that most of these meals are under $10 based on prices (sale prices where possible) in London, Ontario, Canada. We are feeding a family of 4 – 3 adults and 1 toddler, all with healthy appetites. We generally have some leftovers from our meals and if these aren’t being used as part of another meal, they are used for lunches throughout the week.
Prices are based mostly on those at No Frills and FreshCo, the two grocery stores we frequent most often.
Lately, Food Basics, Giant Tiger, and Shoppers Drug Mart have had a few good deals and they are very close to our home too. Note: at this time of year, we are mostly using frozen vegetables as they tend to be better quality and have more nutrients than fresh.
Monday –
Corned beef and cabbage (I’ll be using the leftovers for lunch making it over into corned beef hash), Colcannon (Irish mashed potatoes), yellow wax beans
Tuesday –
Sheet Pan Supper (SS): Honey garlic sausage, apples, potatoes, carrots. Drizzle with 2 T. of honey and 2 T. of olive oil. Pop in the oven at 400 degrees F for about 40 minutes. Serve with this sauce: 1/2 cup marmalade (melted), 1 T. soy sauce, 1 T. balsamic vinegar, 1/2 tsp. ginger paste, and 1/2 cup ketchup.
Wednesday –
Dinner out to celebrate my birthday with family! Going to the Marienbad restaurant. YUM!
Suggestion for you: Tomato soup, grilled cheese sandwiches, raw veggies and Ranch dip. (SS)
Thursday –
Basil Butter Burgers (SS), oven fries, coleslaw (Need a super simple meal before I head out to Bible study).
Friday – Happy Birthday to Me!
Make your own mini pizzas (my favourite combo is cheese, potato, spinach, sweet potato with a drizzle of olive oil and a drizzle of balsamic vinegar but any vegetarian toppings that you like could be used). Tossed salad. (MF) (SS)
Saturday –
Another birthday dinner – this time we’re trying out a new (to us – new-ish to the city) restaurant, Craft Farmacy that I’ve been eyeing for quite a while now.
Idea for you: One Pan Taco Skillet with Tortilla Chips,(SS) sliced peaches
Sunday – Happy Saint Patrick’s Day!
Irish stew (SC) (mine is made with lamb but you can make yours with beef), Irish Soda Bread
Breakfasts and Lunches
Leftovers
Canned soups. Frozen soups and chili.
Eggs
Pancakes or waffles (we always have mix on hand)
Oatmeal
Cold cereal
Yogurt and bran cereal parfaits
Toast with jam and goat cheese or peanut butter
Sandwiches – lunch meat or chicken or cheese or cucumber and onions, selection depending on what’s on hand and on sale that week. This week we are having some egg salad wraps since both eggs and tortillas were on sale.
Salads – chef’s salad with hard boiled eggs, ham, and cheese added, Waldorf salad, Cobb salad
