We’ve been flying by the seat of our pants (did your Mom and Grandma use that expression when you were a kid too?) lately when it comes to menu planning. It feels good to get things organized again and make a weekly meal plan.
We save so much money and so much time by having a plan in place ahead of time. These days we have to be a bit more flexible with it because of some out of stock items, but we’re mostly finding everything we need.
We’ve also stocked up a bit so that we have enough on hand to be able to plan out the following week, rather than waiting to see what comes and what might not.
The weather has been so much nicer here so we’re hoping to get a new tank of propane and starting grilling again too! That and some fresh local produce available always lets me know that summer is truly here.

WEEKLY MEAL PLAN
Monday
Chicken and white bean burgers, oven fries (cut potatoes into strips, dip in egg white, bake in oven at 450 degrees until golden brown), coleslaw
Tuesday
Toasted ravioli with marinara dipping sauce, garlic bread, Caesar salad
Wednesday
Poppy seed chicken with rice, broccoli, carrots
Thursday
Zero points Weight Watchers chili, cornbread
Friday
Pretzel chicken fingers (dip in egg with a bit of mustard mixed in, then in crushed pretzels), roasted potatoes, steamed broccoli
Saturday
Instant pot pork chops, egg noodles, peas, yellow wax beans
Sunday
Lemon garlic roast chicken with roasted potatoes, carrots, and Brussels sprouts
