Tutti Fruiti Week: Summer Fruits with Sabayon

To make the Sabayon (kind of a cross between a meringue, but made with egg yolks, and a custard like sauce):

Ingredients:

6 egg yolks

6 T. sugar

3 T. lemon juice

3 T. ice wine

2 T. whipping cream

6 cups fresh summer fruits

Instructions:  Whisk together the yolks, sugar, lemon juice, and ice wine in a heat safe bowl.  Put the bowl over a pot of water that is at a low simmer.  Ensure that the water doesn’t touch the bowl.  Whisk the mixture constantly, letting it double in volume.  When you lift the whisk out of the mixture, there should be a ribbon formed.  Take this off the heat and mix in the whipping cream.  Sabayon is delicious served warm as originally intended but with these summer fruits, it is so refreshing served chilled.  It can be made and chilled for up to a day ahead of time.

Suggestions for the summer fruits:

Thinly slice some honeydew melon or cantaloupe or form into melon balls. Sprinkle over a few fresh berries (I suggest blueberries or blackberries).  Stir together 1 T. honey, 1 tsp. grated lime zest, and 1 T. lime juice (makes enough for about half a large melon and a cup of berries – but if using with the Sabayon, I tend to use even a little more fruit as you want the Sabayon flavour to come through more than the marinade).  Pour this mixture over the melon/berries (I like to let this sit for a bit to soak in kind of like a marinade) and then top with some Sabayon. 

Cut  up or use a melon baller so that you end up with about 2 cups melon (watermelon is my favourite here but honeydew melon is also good). Cut 2 red grapefruits into segments, working over a bowl so that you can preserve the juices.  Heat the juices up with 1 rooibos tea bag and 2 T. honey over a low heat until just warmed.  Remove from heat and let steep for about 10 minutes before removing teabag.  Toss the fruit with the tea mixture and chill.  Top with some Sabayon before serving.

Combine 3 cups peeled and sliced peaches and a cup of berries (raspberries or blackberries are yummy here).  Then mix together 1/4 cup maple syrup with 1/2 tsp. cinnamon and pour that over the fruit mixture.  Again, throw some Sabayon on there before serving.

What can be really fun for a summer BBQ or party is to offer a selection of fruit mixtures or just plain old fresh fruits and let people choose which ones they want and then they can top with the Sabayon themselves!
