Tostitos Scoops with Goat Cheese and Bacon Fig Marmalade

tostitos-scoops-goat-cheese-bacon-fig-marmaladeLooking for a yummy but easy appetizer idea for New Year’s Eve? Check this one out! Use Tostitos scoops as the base and then add some goat cheese and homemade bacon fig marmalade. You can eat as is or place under the broiler for about 30 seconds or so (watch them closely!) to allow the cheese to melt. Also tasty with some chopped almonds or pecans and dried cranberries sprinkled on before serving but this is optional because believe me, they are delicious with just the cheese and marmalade!
