Since it’s Cinco De Mayo I thought I’d share one of our family favourites that has a bit of Mexican flavour to it.
You can make this with flour or corn tortillas. If we’re using the large (10 inch) flour tortillas, we usually use 3 but with the smaller flour or corn ones, we generally use 4. I saute some chopped onion and then brown some ground beef (about a pound to a pound and a half) in the same pan. To the ground beef, I add my favourite taco seasonings (either a prepared package or your own combination) and a bit of water (1/4 to 1/2 cup). Line a baking sheet or pan with foil and then lightly grease it or spray with Pam. Place a tortilla on the foil and top with some of the ground beef/onion mixture and then we like to add some corn (canned, frozen and thawed, or fresh and cooked) and some black beans. Sprinkle on some shredded cheese and top with another tortilla. Of course, if you want, you can also add some chopped tomatoes or other favourite ingredients to the layers as well. I think some chopped avocado would be delicious in this! Continue layering the taco toppings and tortillas until you finish off with the final tortilla. Sprinkle a little more cheese over top (you can also top with a bit of taco sauce to add a little more moisture to it) and tent with foil. Bake about 15 minutes at about 350 degrees F just until it’s heated through and the cheese is melted.
