Sweet Treat Saturday

In keeping with the fruit week theme and yet a sweet treat for a special occasion:

Banana Split Cake

Ingredients:

Crust:  2 cups graham cracker crumbs

1/2 cup butter or margarine, melted

Filling:

2 cups icing sugar

1 cup butter or margarine

2 eggs

1 tsp. vanilla extract

Also:

1 large can crushed unsweetened pineapple

4 bananas, cut into slices lengthwise

1 litre whipped cream

Nuts, chocolate syrup, maraschino cherries

Instructions:  Combine the crust ingredients and press into a 9 by 13 pan.  Bake for 8 minutes at 350 degrees F.  Beat all filling ingredients together with an electric mixer for 15 minutes.  Spread the filling over the cooled crust.  Drain the pineapple and put on top of the filling, followed by the bananas.  Spread the whipped cream on top and then sprinkle with nuts, pour over chocolate syrup, and dot with maraschino cherries.  Refrigerate at least 4 hours before serving.
