The kids have gone back to school and that makes it the perfect time to have a look at your daily diet and set some new nutrition goals for you and your family. One easy way to increase your vitamin and nutrient intake is by incorporating sweet potato into easy recipes your family will love. You know how much I love sweet potatoes! I’ve shared quite a few sweet potato recipes here on Creative Cynchronicity before but I’ve got a few new ones for you today.
A recent survey revealed that 31 per cent of Canadians purchase sweet potatoes for their nutrition. Not surprising since the Center for Science in the Public Interest, a well known organization that advocates for healthier foods, has declared American sweet potatoes #1 in nutrition. Their nutritional value is superior to 58 other vegetables, even beating out kale, spinach and carrots! Yes, you read that correctly. Superior to kale!!! By the way, did you know that sweet potatoes and yams are NOT the same thing? Sweet potatoes are far more nutritious!
So, here are two tasty sweet potato recipes that are not only easy to make, but incredibly nutritious dishes brought to you by the American Sweet Potato Marketing Institute (ASPMI):
Sweet Potato Smoothie: Try this sweet potato smoothie as a breakfast replacement or energizing post-workout snack.
Sweet Potato Stew: Now that fall is here, fuel your family with this hearty and healthy vegetarian stew.
