These two sweet potato pierogi recipes take some of our favourite flavour profiles and turn them into a scrumptious savoury option and a delectable sweet one. If you love pierogies, these are a must try.
My best friend from the time I was 11 years old is Polish and she taught me to make her family’s secret recipe for pierogis, handed down for generations. On a recent trip to Poland, one of the first things we did was to scope out the best pierogis in Krakow. Over the years, I’ve experimented with a variety of traditional and non-traditional fillings for them. These are some of the results.

Sweet Potato Pierogi Recipes
For the dough:
NOTE: Short on time? Use premade wonton wrappers purchased at your grocery store instead of making the dough yourself.
All purpose flour – 4 cups (add more if needed for the right consistency)
1 egg
½ tsp. salt
1 cup of the water from cooking the sweet potatoes, cooled to room temperature

For the savoury filling:
Sweet potato, 1 large, peeled, chopped, boiled until tender (reserve water)
4 oz. goat cheese
½ small onion, diced
1 lb. chorizo
Olive oil
Salt and pepper to taste
Optional: thyme and sage to taste
For the sweet filling:
Sweet potato, 1 large, peeled, chopped, boiled until tender (reserve water)
1 medium apple, peeled and diced
½ small onion, diced
Dried cranberries, quantity to taste
Optional – want it a little sweeter? Add a touch of brown sugar and some cinnamon
Butter and olive oil
Instructions: To make the dough, place the flour and salt in a bowl. Make a well in the center and crack the egg into it. Pour in potato water and begin to mix the flour with the water and egg. I start mixing with a fork and then progress to a wooden spoon. As the dough begins to form, I find it easier to use my hands to work with it until I have a ball of dough. Roll out the dough and cut into circles using a drinking glass or a biscuit cutter (or large round cookie cutter if you have one).
To make the fillings:
Savoury – Cook the chorizo and onion in olive oil until the sausage is cooked and the onions are caramelized. Mix with sweet potato, goat cheese, and spices.
Sweet – Saute the onions and apples in a mixture of butter and olive oil until onions are translucent. Mix with sweet potato, cranberries, and spices.
To assemble the pierogis: I like to use a cookie dough scoop (an ice cream scoop is too big) to put the filling into the center of each circle of dough. Be sure not to overstuff them or they will burst open when you cook them. Fold the dough in half and press the edges together tightly. You can add a little crimping to it as well for extra security.
Bring a large pot of salted water to a boil. Drop in about a third to a half of the pierogis at one time, cooking until they float to the top (about 5 minutes). Remove with a slotted spoon and repeat until they are all cooked. I like to then give them a quick toss in a frying pan with butter and olive oil in it just until they are lightly browned on both sides.
Serve as is or with sour cream.
