Ingredients:
¼ cup peanut butter
3 T. tamari
Juice of 1 orange
One 1 inch piece of ginger, peeled and grated
One 1 pound bag of shredded carrots
4 scallions thinly sliced
1 cup matchstick like pieces of zucchini (optional)
1 cup coarsely shredded cabbage (optional)
1 red apple, shredded or thinly sliced
(if you like Granny Smiths, you can add some of that as well)
¼ cup dried cranberries and/or raisins
Directions: In a medium bowl, microwave the peanut butter for about 10 seconds to soften it. Whisk in the tamari, orange juice, and ginger. If needed, add a splash of hot water to thin the sauce down a bit. Stir the fruits and vegetables into the dressing and toss gently. Makes 4-6 servings.
