Picnic Week: Crispy Chicken

Here’s a crispy chicken recipe without all the fat from frying:

Ingredients:

1 qt buttermilk
1 1/2 tsp poultry seasoning
2 T plus 2 tsp coarse salt
1 tsp pepper
3 1/2 lbs skinless chicken pieces
4 cups Rice Krispies

Instructions:
Whisk together milk and seasonings.  Submerge the chicken into milk mixture, cover and refrigerate for 3 hours or up to overnight.  Place an oven safe wire rack on a baking sheet.  Using your food processor (or smash them with a mallet!), grind the cereal until you have crumbs. Take the chicken out of the milk and coat with the cereal crumbs. You may need to press them on gently to make them stick.   Place the chicken pieces on the rack/baking sheet and bake until golden brown about 35-40 mins at 425 degrees F.
