Menu Plan Monday

Things on sale this week at FreshCo that this menu plan makes use of: ground chicken (buying extra for next week), ground beef (buying extra for next week), Italian dressing (use coupon in Flipp app). onions, and boneless chicken. Using price matching from Sobey’s to get sour cream, pork chops, from Loblaw’s to get shredded cheese, and from Food Basics to get whole chicken and pasta sauce (stock up!) on sale.

Monday – Make double the meatballs and save half for Thursday. Cheesy meatball skillet: For one serving of the meatballs – Combine 1 lb. ground beef, 1/2 cup panko crumbs, and 1/8 cup Italian dressing. Form into 1 inch meatballs. Heat 1/8 cup of Italian salad dressing in a non-stick skillet and brown the meatballs in it. Once browned, turn down the heat to a simmer and add 1/2 cup beef broth. Simmer for about 5 minutes until thoroughly cooked. Stir in 1/2 cup sour cream and cook for about 30 seconds, until heated through. Serve over cooked pasta and sprinkle with shredded cheese. Steamed green beans and carrots.

Tuesday – Pork chops and rice, peas, roasted butternut squash

Wednesday – Fiesta Chicken and Pasta:  Saute chopped onions (1/2 medium) in olive oil. Add 1 lb boneless chicken (cut into pieces) and stir fry for about 5 minutes. Add about 1 cup of chopped peppers (your choice of color – I like orange in this), 1/2 cup Italian salad dressing, and 1 T. chili powder. Continue to cook for another 3-4 minutes until chicken is thoroughly cooked. Stir in 1/2 cup salsa and 1/2 cup sour cream. Toss with cooked pasta of your choice. Top with shredded cheese. Steamed broccoli and cauliflower. 

Thursday – Meatball sandwiches: On crusty rolls – place a layer of spinach (raw), some warmed pasta sauce, leftover meatballs from Monday, top with a little more pasta sauce. coleslaw, pickles

Friday – Meat Free Friday.  Spinach potato frittata. Tossed salad.

Saturday – Chicken parm burgers, oven fries, raw carrots and ranch dip

Sunday – Roast whole chicken (save leftovers for Wednesday), roasted potatoes and carrots, dinner rolls
