Welcome back to another Menu Plan Monday! I hope you find these weekly meal plans as handy as I do. They keep me organized and on track. And they keep my family well-fed with simple, delicious, nutritious meals. Win-win.
Mostly, this week was all about work. And income tax. Sigh. We did go and have some fun on Wednesday though. As we do most weeks, my daughter, grandson, and I headed to Stars and Strollers. It’s our little venture out of the house and let’s be honest – it’s our sanity saver! Before the movie, we grabbed some poutine from New York Fries (our FAVE)! Then we headed to the theatre to see the movie Love, Simon. We both highly recommend it. It carries such an important message about love and acceptance. In fact, we liked it so much that when we headed to Build-a-Bear after the movie, we named the bear Simon. All in all, it was a fun afternoon with my two favourite people. Next week is Holy Week for us, so I’m really concentrating on simple, quick meals.
Weekly Menu Plan for Week of March 26
Monday –
Sweet & Sour Chicken with Rice and Baby Carrots, (SC), Spinach
Tuesday –
Pioneer Woman’s Meat Loaf, egg noodles, broccoli, corn
Wednesday –
Crispy Oven Baked Ritz Cheddar Chicken, Hasselback potatoes, green beans, carrots
Thursday –
Spaghetti Carbonara, garlic bread, Caesar salad
Friday –
Meat free Friday: Stuffed potatoes (Bake potatoes as per usual. Slice in half lengthwise and scoop out insides. Mash potatoes with a fork and add some ricotta or cottage cheese, cooked spinach OR frozen spinach that has been thawed and drained, shredded cheese, salt, pepper, and roasted garlic. Other great additions you could use as well or instead are cooked carrots, caramelized onions, feta or goat cheese, cooked chopped broccoli, cooked chopped cauliflower.) Tossed salad.
Saturday –
Super Simple Saturday: Slow cooker Korean beef (FF) in lettuce wraps, radish slaw
Sunday –
Beer Can Chicken with Spicy Dry Rub Marinade, (fingers crossed for no rain so we can BBQ!), Baked Potatoes, Corn
