Well, around here this is March Break week. It doesn’t really affect us since there are no school-aged kids in the family What it does mean for us is that there are tons of things around town to do this week. If you live in the London, Ontario area, you really should check these out. Anyway, we’re going to a display put on by this organization that rescues and rehabilitates wild animals. I’m probably more excited than I should be that I get to be “this close” to a sloth! I’m also planning to take a little time to myself since it’s my birthday this week. I’m older than dirt and figure I deserve a break! In my menu plan below, you’ll see some items that are underlined. That indicates a freezer meal. We rely a lot on simple meals and freezer meals are a big help.
We make a lot of the freezer meals at Supperworks. On Saturday, we were there for 1 1/2 hours and made 24 meals. That involved 2 of us working (part of the time it was me and my daughter and then when she was feeding the baby, my son-in-law stepped in) and also includes taking a 10 minute break. Now, you have to take into account that at Supperworks, they have done all of the chopping of ingredients and it’s all laid out in front of you. And they come along behind you and clean up. That obviously saves time (and is one of the reasons we love going to Supperworks) but I used to do similar meal prep at home when my daughter was younger. In the next few weeks, I’ll be sharing my tips for easy meal prepping at home!

Monday –
Porcupine Meatballs (we oven bake ours – so much easier!), Egg Noodles, Broccoli, Carrots
Tuesday –
Parmesan Breaded Chicken Fingers, Oven Fries, Coleslaw
Wednesday –
Pasta all’Amatriciana, salad, garlic bread
Thursday –
Happy birthday to me! We’re headed to Denny’s so I can get my free birthday meal.
Friday –
Meatless Meal: Three Cheese Mac and Cheese, Roasted Brussels Sprouts, Honey Maple Bourbon Glazed Carrots
Saturday –
Applesauce Meatloaf (my sister’s recipe – it’s amazing!), Mashed Potatoes, Green Beans
Sunday –
Pork Wellington (we leave out the mushrooms because we have some food sensitivities), Spaetzle (German egg noodles),
