Menu Plan Monday: Week of January 29

Things are starting to get back to normal around here. My little Moonpie still has a lingering cough but it’s better. He is full of energy, giggling up a storm, and raring to go. As for me, I feel like the pneumonia has finally cleared out of my chest and I am on the road to recovery. I am still lagging a bit in energy (oh to have half of what Walter has) but I’m getting there. So, we’re still trying to rely on quick and easy recipes for this week’s menu plan. Plus it’s January which for me means comfort food.

Monday –

My Mom’s chili con carne recipe, my sister’s cornbread recipe (recipes to come but seriously, they are such simple recipes!).

Tuesday –

Sam’s night to cook: Chicken and broccoli and carrot stir fry with Udon noodles

Wednesday –

Sonoma Pork Tenderloin (we also topped this with slices of pancetta), Roasted Potatoes, Peas (Note: Friday’s Sauerbraten needs to be put in its marinade today!)

Thursday –

Cottage pie (that’s Shepherd’s pie made with beef not lamb), tossed salad

Friday –

Chicken and dumplings, green beans, carrots

Saturday –

Mr. Anderson won’t be home for dinner so we’ll order takeout.

Sunday –

Great grandma’s sauerbraten, spaetzle, spinach, squash
