Menu Plan Monday: Week of January 22

Well, in the past week, we’ve been to the emergency room twice. My little Moonpie has croup for the second time in his short little life. This time, he even spiked a fever and had a couple of inconsolable crying fits. Heartbreaking! Despite it all, most of the time he kept trying to smile but when he just snuggled into my arms and didn’t attempt to use me as a Jolly Jumper, I knew he must be feeling pretty bad. Of course, then my daughter came down with the virus and now it has made its way to me.

So, I’m keeping this week’s Menu Plan Monday post short and sweet with a variety of tried and true family favourites.

Monday – Pioneer Woman’s meat loaf, egg noodles, spinach, carrots

Tuesday – Neapolitan layered pasta casserole (meatless), tossed salad, garlic toast

Wednesday – Mom’s Chicken and Rice Casserole, green beans, corn

Thursday – Sheet pan dinner: Pork chops – brush on both sides with melted butter mixed with garlic and Italian herbs. Place pork chops on a baking sheet. (I cover mine with foil and spray with Pam). Toss cut up potatoes (sometimes I use a mixture of white and sweet potatoes – you can peel if you want, but I don’t bother) with olive oil and lemon pepper. Add that to the baking sheet and put in the oven at 425 degrees F for about half an hour. Remove baking sheet from oven. Make a mixture of 1/4 cup grated Parmesan, 1/2 cup bread crumbs (I like Panko), and 1 T. melted butter. Top the pork chops with this crumb mixture and press down to help it adhere. Toss pieces of broccoli (green beans and carrots work well here too) with olive oil and lemon pepper and add to baking sheet. Put back in for an additional 12-18 minutes until everything is cooked through.

Friday – Grilled lemonade chicken (I use an indoor grill but this can also be roasted in the oven), quinoa, carrots, peas

Saturday – Coney Island hot dogs, coleslaw, raw veggies and Ranch dip

Sunday – My world famous (ish) roast beef, mashed potatoes, bacon wrapped green beans
