Menu Plan Monday: Week of January 22

menu plan monday weekly family meal plan

Well, in the past week, we’ve been to the emergency room twice. My little Moonpie has croup for the second time in his short little life. This time, he even spiked a fever and had a couple of inconsolable crying fits. Heartbreaking! Despite it all, most of the time he kept trying to smile but when he just snuggled into my arms and didn’t attempt to use me as a Jolly Jumper, I knew he must be feeling pretty bad. Of course, then my daughter came down with the virus and now it has made its way to me.

So, I’m keeping this week’s Menu Plan Monday post short and sweet with a variety of tried and true family favourites.

Monday – Pioneer Woman’s meat loaf, egg noodles, spinach, carrots

Tuesday – Neapolitan layered pasta casserole (meatless), tossed salad, garlic toast

Wednesday – Mom’s Chicken and Rice Casserole, green beans, corn

Thursday – Sheet pan dinner: Pork chops – brush on both sides with melted butter mixed with garlic and Italian herbs. Place pork chops on a baking sheet. (I cover mine with foil and spray with Pam). Toss cut up potatoes (sometimes I use a mixture of white and sweet potatoes – you can peel if you want, but I don’t bother) with olive oil and lemon pepper. Add that to the baking sheet and put in the oven at 425 degrees F for about half an hour. Remove baking sheet from oven. Make a mixture of 1/4 cup grated Parmesan, 1/2 cup bread crumbs (I like Panko), and 1 T. melted butter. Top the pork chops with this crumb mixture and press down to help it adhere. Toss pieces of broccoli (green beans and carrots work well here too) with olive oil and lemon pepper and add to baking sheet. Put back in for an additional 12-18 minutes until everything is cooked through.

Friday – Grilled lemonade chicken (I use an indoor grill but this can also be roasted in the oven), quinoa, carrots, peas

Saturday – Coney Island hot dogs, coleslaw, raw veggies and Ranch dip

Sunday – My world famous (ish) roast beef, mashed potatoes, bacon wrapped green beans

I just love a festive dessert! Make me something filled with the flavors of the holidays and I’m all in. I have to be honest, though. I’m not normally a big peppermint and chocolate fan. That all changed when I tried this Peppermint Cookies Layered Dessert Lasagna. The combination of chocolate, peppermint, cream cheese and […]

Even if you’re not a “foodie” most people look forward to indulging in the culinary delights of holiday time between Thanksgiving and New Year’s Eve. This  means that even people who are typically disciplined eat too much in one evening, eat rapidly, imbibe amounts of alcohol they are unaccustomed to, and consume foods that may not […]

Are you heading off to a potluck anytime soon? We discovered this Lemon Poppy Seed Chicken Casserole last summer and it quickly became a family favorite. It is so quick and easy to make and it travels really well. This is comfort food at its best. It’s one of those main dishes that makes you […]

bread pudding recipes

Are you a bread pudding fan? Most people I know seem to either love it or hate it – although many who say they hate it then admit they’ve never tried it. I get it. It sounds weird, right? Bread and dessert don’t usually go together. These delicious bread pudding recipes might just change your […]
