Hey there! Can you believe we’re back again with another Menu Plan Monday? It seems like this week just flew by! I had a super busy but wonderfully productive work week. Walter is growing like crazy. He loves to mimic me (I think because I mimic him and then it just becomes a whole game of Monkey See Monkey Do). So, he has started greeting me with his usual giant smile followed up by sticking his tongue out at me. (I teach him some of the best habits lol). He has developed quite a love for books which makes both his mother and I very happy, being quite the bookworms ourselves. My current read: The Address by Fiona Davis. I loved her previous book, The Dollhouse, and this one does not disappoint either. Walter’s current read: Goodnight Baseball. It’s a board book given to him by his Great Uncle Dave.

Menu Plan Monday Week of April 2
Monday:
Oeufs en Cocotte -eggs cooked in ramekins – simple but they always feel so elegant to me, (MF but you can add bacon or chorizo or something similar if you prefer), toast soldiers, spinach salad, fruit cocktail.
Tuesday:
Slow Cooker Bacon Apple Pork Chops, egg noodles, green beans, butternut squash
Wednesday:
Roast chicken (PLO), roasted mini potatoes (PLO), carrots, Brussels sprouts.
Thursday:
Slow Cooker Lasagna, (FF, SC), Caesar salad, garlic toast
Friday:
Mom’s Chicken and Rice Casserole, steamed broccoli, carrots
Saturday:
Ginger Beef and Veggie Stir Fry (FF), Udon noodles
Sunday:
Italian Herb Crusted Pork Tenderloin (FF), Roasted Sweet Potatoes, Peas
