Menu Plan Monday: Week of April 21st

Hello friends! I hope you had a lovely weekend.  We had a very quiet Easter for the most part around here.  Spent one day with our extended family making crafts, doing Easter egg hunts, and stuffing ourselves silly at a Chinese all you can eat buffet.  The rest of the weekend was pretty low-key.  What was yours like? I’ve got a super busy week so I’m relying a lot on really simple meals and those I can make in the slow cooker for this week’s menu plan. 

Monday – Pork tenderloin (made in the slow cooker), roasted sweet potatoes, spinach with bacon and hard boiled eggs (left from Easter)

Tuesday – Chicken and dumplings (slow cooker), carrots, green beans

Wednesday – Cuban sandwiches, cole slaw, potato salad

Thursday – Chicken fingers, oven fries, raw carrots/broccoli/cauliflower with Ranch dip

Friday – Make your own mini pizzas: use English muffins as the crust and add favourite toppings, tossed salad

Saturday – Pioneer Woman meatloaf, mashed potatoes, corn

Sunday – Neapolitan pasta casserole, Caesar salad, garlic toast
