Menu Plan Monday: Monday September 28, 2015

Menu Plan Monday - a week of meals that are quick, easy, and inexpensive

Hello and welcome to another Menu Plan Monday!

 

I try to keep these meal plans quick and easy. I always make extra where I can so that I can make use of leftovers in future meals. I also plan my meals around seasonal foods and/or what’s on sale to make them as inexpensive as possible.

Monday – Meatless Monday: Cheese Ravioli, pear spinach salad, steamed cauliflower (make extra for Friday – cook and pop in the freezer until needed OR go ahead and make the quiche tonight too and pop that in the freezer until needed. If you are cooking for one or two like me, cut it into slices and individually wrap and freeze those).

Tuesday – Roast beef hash (use leftover beef from last Sunday and leftover roasted potatoes from yesterday), carrots, peas

Wednesday – Whole roast chicken with roasted potatoes, green beans

Thursday – Baked Ham, noodles, roasted Brussels sprouts

Friday – Meat Free Friday: Cranberry Cauliflower Brie Quiche, tossed salad

Saturday – Chicken salad (made from leftover roast chicken with Greek yogurt, mayo, chopped apples, chopped pecans – I like to add some chopped radishes too but it’s really good without as well) in a wrap, carrot sticks, grapes

Sunday –  Leftover ham added to tortellini salad, any leftover veggies tossed with balsamic vinaigrette
