What are your plans for dinners this week? For my menu plan this week, I’m trying to switch things up a little bit and put some new things into the plan that I haven’t had in quite a while. And I’m feeling spring in the air and starting to look towards more grilling and more warm weather foods like pasta salads and potato salad. (Of course the fact that I scored 15 boxes of Catelli pasta last week that were marked down to 79 cents means pasta is going to be on the menu a lot!) I am taking one night off cooking though because it’s my birthday this week.
Deals this week in London, Ontario:
Food Basics – Ham $1.47 lb., cauliflower $1.88 each, butter $2.88 lb, broccoli $1.50 each, 5 lb potatoes $1.88
FreshCo – Kraft Peanut butter 2 kg $5.97, sweet potatoes 69 cents lb., ricotta 300 g for $2
Loblaws – Bullseye BBQ sauce, Kraft salad dressing, and Miracle Whip – 99 cents each, chicken legs $1.99 lb
Walmart – whole roasted chickens $7.97 (great for eating as is or shredding and using in chicken salad and other recipes)
WEEKLY MENU PLAN
Monday – Meatless Monday: Stuffed potatoes (Bake potatoes as per usual. Slice in half lengthwise and scoop out insides. Mash potatoes with a fork and add some ricotta or cottage cheese, cooked spinach OR frozen spinach that has been thawed and drained, shredded cheese, salt, pepper, and roasted garlic. Other great additions you could use as well or instead are cooked carrots, caramelized onions, feta or goat cheese, cooked chopped broccoli, cooked chopped cauliflower.) Tossed salad.
Tuesday – It’s my birthday and no I’m not going to cry but I am going to go out for dinner!!!
Wednesday – Broiled ham steak, twice baked sweet potatoes, sauteed green beans, steamed cauliflower
Thursday – Chicken legs (oven BBQ if weather is bad but it’s supposed to be nice!), macaroni salad, peas, carrots
Friday – Meat Free Friday: Neapolitan Pasta Casserole, tossed salad, garlic toast
Saturday – Super Simple Saturday: Chicken salad sandwich wraps (blend the leftover ricotta or cottage cheese from Monday with some pistachios, a bit of garlic, some rosemary and some lemon juice; whisk in some olive oil until thickened. Spread on a flour tortilla and top with spinach leaves, chopped apples and shredded chicken), oven sweet potato fries
Sunday – Simple Sabbath Sunday: Slow cooker Korean beef (I have several packages of the meat in the marinade in my freezer) in lettuce wraps, radish slaw
