I missed a few menu plans over the holidays – I was away and not doing any of the cooking so there didn’t seem much point but then I got back home and well, I guess a few weeks off had sort of taken the habit away and I didn’t meal plan last week either. And you know what? It made a difference. I spent more on groceries, I had that “what am I going to have for dinner” dilemma every day, and I just felt disorganized in general.
So, I’m back with Menu Plan Monday. Check out my meal plans below for quick and easy dinner ideas. I hope these help you as much as they help me!
Monday – Slow cooker baked penne, Caesar salad, garlic bread (here’s a hint for you- I often have leftover hotdog and hamburger buns. I collect these in a large freezer bag and then use them to make garlic bread by brushing them with melted butter or olive oil and rubbing with a clove of garlic).
Tuesday – Potato chip chicken fingers, roasted potatoes, corn
Wednesday – Cuban Style Pork Tenderloin, (leftovers for Cuban sandwiches on Saturday), egg noodles, green beans
Thursday – Slow cooker stuffed peppers, steamed carrots, rice
Friday – Meat Free Friday: Rosemary potato soup and cheesy onion biscuits, tossed salad
Saturday – Cuban sandwiches, oven fries, coleslaw
Sunday – Pot roast (save extra for next week), potatoes, carrots
