Meal planning is a lifesaver for me. Life, especially at this time of year, gets so booked up with events and activities and if I didn’t stay on top of being organized, especially when it comes to meals, I’d be lost. Or starving. Or eating a lot of junk food. But mostly starving because if I don’t have a plan, I tend to just skip meals…like multiple meals in a row and that’s not good for anyone!
This menu plan make use of the items on sale in my area of London, Ontario as well as utilizing leftovers so that nothing gets wasted, while still making meals that are delicious and (mostly) balanced and nutritious.
Monday – Mashed potato pancakes (using leftover mashed potatoes from yesterday) topped with chorizo (use rest of chorizo on Thursday) and a poached (or fried) egg, sauteed spinach (save rest of spinach for Friday), roasted squash
Tuesday – French dip sandwiches (using leftover roast beef from Sunday), coleslaw (save leftover cabbage for Thursday), carrot sticks, pickles
Wednesday – Chicken and broccoli Alfredo, (save rest of broccoli for Saturday), steamed carrots
Thursday – Sweet potato and chorizo pierogies, fried cabbage
Friday – Meat Free Friday: Spinach and potato frittata, tossed salad
Saturday – Salisbury steak meatballs over noodles, steamed broccoli, corn
Sunday – Roasted whole chicken (save leftovers for next week), roasted potatoes and carrots, green beans
