Menu Plan Monday for the Week of November 6

Happy Monday! We had a lovely weekend welcoming my sweet little grandson into our church. See one of the photos of this precious moment below. My son-in-law’s family also had a baby shower for him so it was a fun friend and family filled weekend! That being said, whew, I am tired today. We mostly focus on simple meals around here anyway but that is definitely what we’ll be doing this week with our menu plan. I need to recover from the weekend and get caught up on some work!

Monday – It’s leftover night!

Tuesday – Meatloaf, mashed potatoes, carrots, Brussels sprouts

Wednesday – Black bean and sweet potato burritos (from SupperWorks), Mexican rice, fruit salad

Thursday – Potato Chip Chicken Fingers (yes you read that correctly! Use any flavour of chips in place of breadcrumbs. DELICIOUS!), oven fries, raw veggies and dipping sauce (for a great dipping sauce with the chicken fingers, I mix together some mayo with my favourite BBQ sauce. Mmmm!)

Friday –  Meat Free Friday: Grilled cheese sandwiches, tomato soup, fruit and yogurt parfaits

Saturday – Pork chops, Spaetzle, peas, corn

Sunday –  Beef roast, Yorkshire pudding, roasted potatoes and carrots

    I bet the chips on the chicken fingers give such an AWESOME FLAVOR!!!

      SO good! It’s really simple, a great way to use up leftover chips (or ones that got crushed), and so tasty.
