Things are busy this time of year – there’s no doubt of that! So this week’s menu plan relies on some slow cooker meals and quick and easy meals to make sure that we’re still getting decent food in our bodies despite our hectic schedules. I also went for some comfort food. Although it’s still unseasonably warmer than usual here (we’re breaking some weather records!), there’s still a bit of a chill in the air and some bone-warming food is definitely called for.
Monday – Slow Cooker Baked Penne, Caesar salad, garlic bread
Tuesday – Chicken and rice casserole (leftover chicken from Sunday), broccoli, peaches
Wednesday – Slow cooker pot roast, roast potatoes,peas
Thursday – Potato Chip Chicken, oven baked fries, raw carrots and Ranch dip
Friday – MEAT FREE FRIDAY: Cranberry Cauliflower Brie Quiche, tossed salad
Saturday – Sloppy Joe Sandwiches, pear salad, spinach
Sunday – Slow cooker ham (use extra next week) cooked with potatoes and green beans, my sister’s cornbread
