Here’s my menu plan for the week of December 14, 2015. Once again, I’m trying to stick with fall/winter comfort food that is quick and easy to make. It’s so busy getting ready for Christmas but I want to make sure we’re not resorting to junk food every night (Christmas has enough junk food already). I’m making my plans for my Christmas week dinners as well – what will you be having this year?
Monday – Chicken soup with dumplings, carrots, peas
Tuesday – Skillet strata (use leftover ham from Sunday), leftover green beans
Wednesday –Bistro burgers, oven fries, pickles, carrot sticks and Ranch dip
Thursday – Cuban style pork tenderloin (save leftovers for Sunday), noodles, peas
Friday – MEAT FREE FRIDAY: Lentil and vegetable quinoa, roasted beet salad
Saturday – Bacon wrapped chicken, cauliflower, baked potatoes
Sunday – Cuban sandwiches, coleslaw
