MAPLE NUT FUDGE
Ingredients:
2 c. sugar
1 c. pure maple syrup
1/2 c. milk
2 T. corn syrup
1 tsp. vanilla
1 c. cup chopped nuts (if desired…I prefer walnuts in this)
1 T. butter
Instructions: Combine the sugar, syrup, milk, and corn syrup. Bring to a boil and stir constantly until it reaches 238 degrees F on a candy thermometer. Remove mixture from the heat and allow to cool until it reads 110 degrees F on the candy thermometer. Add the remaining ingredients and beat until it has thickened and is creamy. Put the mixture into a square 8” pan and put into the refrigerator until well chilled. Cut into squares.
MAPLE BARS
Ingredients:
1/2 cup sugar
2/3 cup flour, sifted
1/4 cup butter + 1/4 cup shortening
1 cup of raisins or chopped nuts (or a combination)
1 cup rolled oats
1/2 tsp. baking powder
1/2 cup maple syrup
1 tsp. vanilla
1 egg
Instructions: Stir together all ingredients until well blended. Spread into a greased 8” square pan and bake at 350 degrees F for 30-35 minutes. Cut into squares while it’s still warm.
Oatmeal Maple Cookies
Ingredients:
1/4 cup butter + 1/4 cup shortening
1 cup maple syrup
1/2 cup milk
1 egg, beaten
1 1/2 cups flour
1/2 tsp. salt
2 tsp. baking powder
1 1/2 cups oatmeal
1/2 cup raisins
1/2 cup chopped nuts (I prefer walnuts or pecans)
Instructions: Mix together all but the last three ingredients until well combined. Stir in the final three ingredients. Drop the cookie dough by tablespoonful onto an ungreased cookie sheet and bake at 375 degrees F for 10-12 minutes. Makes about 2 dozen cookies.
Maple Bread Pudding
Ingredients:
3/4 cup maple syrup
1 tsp. lemon juice
4 slices bread (remove the crusts – any kind of bread works here but some special ones to use are egg bread, sourdough, or raisin bread)
2 eggs
2 cups milk
1 T. butter
1/4 tsp. salt
1/2 cup chopped nuts or raisins or a combination if desired
1/4 tsp. vanilla
Instructions: Put the syrup in the top of a double boiler. Butter the slices of bread and cut into cubes. Add these to the double boiler along with the nuts/raisins and the lemon juice. Beat the eggs with the milk, salt, and vanilla and pour this over the bread mixture in the top of the double boiler. Don’t stir! Bring the water to a gentle boil and keep it at this for about an hour until set. When you serve, spoon a bit of the sauce over each serving. Makes about 4-6 servings.
MAPLE APPLE PIE
Ingredients:
5 cups sliced apples
1/2 cup sugar
2 tbsp. flour
1/2 tsp. cinnamon
dash of salt and nutmeg
1/4 cup maple syrup
1/2 cup sour cream
pastry for double crust 9" pie
Instructions: Stir the dry ingredients together and sprinkle 2 T. of it over bottom of piecrust. Mix the rest of the dry ingredients to the apples, syrup, and sour cream. Pour this apple mixture into the pie crust and cover with the top crust. Bake at 425 degrees F for 15 minutes and then reduce the heat to 325 degrees F for 45 minutes longer until golden brown. Allow to cool down a bit before serving or the pie will be very “runny” when you try to slice it.
