Maple Bacon Potato Chip Chicken Fingers

maple-bacon-potato-chip-chicken-stripsYes, you did read that correctly – these chicken fingers are made with a potato chip coating. You can use any kind of potato chips that you want – actually just plain ones are quite tasty on this – but since Canada is filled with wild and wacky chip flavours and since it’s maple syrup season, I decided to use President’s Choice World of Flavours Maple Bacon Chips.

These are so quick and easy to prepare – perfect for feeding your family on one of those crazy busy nights! I often like to serve them with my homemade oven fries. I simply cut up potatoes (can do it with sweet potatoes too) into strips and then dip them in egg white. The egg white helps to make them get crunchy on the outside. Place on a baking sheet and bake until done – depending on how thick you make the pieces I find this takes about 20-30 minutes in a 400 degree F oven. I flip them over about halfway through.

maple-bacon-potato-chip-chickenNow for the chicken fingers, you’re going to need: boneless skinless chicken breasts cut into strips (or you can make them as nuggets), mustard, maple syrup, eggs, and the maple bacon chips. I also made a simple dipping sauce out of mayonnaise, mustard, and maple syrup. For the one chicken breast that I made, I used about half an egg, about 1/3 cup of chips (before crushing them), and 1 tsp. maple syrup with 1 T. mustard.

maple-bacon-potato-chip-chicken-fingersMix the mustard and maple syrup together and brush the chicken pieces with this mixture. Dip each chicken piece into the egg and then the crushed potato chips. Place on a non-stick (or use non-stick foil) baking sheet. Cooking time will vary according to thickness and size of the chicken pieces but mine took about 12 minutes at 400 degrees F.

By the way, try these sometime with pretzels in place of the potato chips. YUM!
