Jelly Bean Fudge

Ingredients

2 c. White Chocolate Chips
2 c. Assorted Jelly Beans
1 Whole 16 oz. container of Vanilla icing
1 T. Rum Extract
1 T. Coconut Extract
Instructions:  Line an 8” square pan with foil or parchment.  Place the chocolate chips in the top of a double boiler over water on medium heat and melt them.  Generally it works best to remove it from the heat when only partially melted so you don’t overcook as they will continue melting from the residual heat.  Be sure also to stir this occasionally as it’s melting and then once you remove it from the stove to melt evenly.  Stir in the extracts and the icing until smoothly blended.  Allow to cool at room temperature and stir in all but 1/4 c. of the jellybeans.  Spread the fudge in the pan, smoothing out the top.  Sprinkle the remaining jellybeans on top of the fudge to garnish.
