Chicken Parm Burgers

Mix together:  1 1/2 lbs. ground chicken, 2 T. finely chopped fresh thyme (use less if dried), salt and pepper to taste.  In a separate bowl, stir together 1 cup breadcrumbs or panko crumbs, 3-4 T. sesame seeds, 1/2 cup grated or shredded Parmesan cheese, and 2-4 T. finely chopped fresh parsley (use less if using dried).  Make the chicken mixture into patties and then press into the breadcrumb mixture to coat.  Drizzle a little olive oil into a skillet and cook over medium heat until they are golden brown in colour and cooked all the way through – about 3-5 minutes per side.  For my daughter, I serve these on a Ciabatta bun with just a bit of spaghetti sauce on them in place of other condiments (ketchup or mustard etc) but I like to add a little ricotta cheese (you can drizzle a bit of olive oil and season with salt and pepper if desired) to mine.  A hearty green like arugula is very tasty on this as well.
