This coming weekend is Victoria Day here in Canada and you know what that means? It’s the unofficial start of summer! I don’t want you to think that I’m incredibly excited or anything but I’ve been making a BIG summer bucket list. Not only am I sick and tired of winter (and even spring…it’s been weird to say the least….we had snow on Sunday!) but this summer means my daughter and son-in-law are headed back home to Canada! Sunny days on the beach, backyard BBQs (I just got my first invitation to one!), delicious ice cream treats, and the kids back home with us? That is winning folks!
So, to kick things off this summer, I decided to try my hand at making ice cream. I don’t have an ice cream machine though so I researched a bunch of different ways to make it without one. After trying a few, I found that this one worked the best for more. Then it was time to play around with flavors. I started off at the produce department at my local grocery store to see what looked good. I had originally thought of using berries but they were sold out of all but blackberries. The cherries looked really good though so that’s what I went with! Add in some dark chocolate and balsamic vinegar and you’ve got an amazing balance of flavors that will tickle your taste buds.
