This coming weekend is Victoria Day here in Canada and you know what that means? It’s the unofficial start of summer! Sunny days on the beach, backyard BBQs (I just got my first invitation to one!), delicious ice cream treats, and the kids back home with us? That is winning folks!
Cherry Balsamic Ice Cream with Dark Chocolate Chunks
To kick things off this summer, I decided to try my hand at making ice cream. Cherries are one of my favorite fruits so that’s what I went with! Add in some dark chocolate and balsamic vinegar and you’ve got an amazing balance of flavors that will tickle your taste buds.
- 1 ¼ pounds fresh cherries, pitted and quartered
- 1 cup white sugar, divided in half (if you can get super fine sugar, it works best but granulated is a good substitute)
- 3 tablespoons lemon juice
- 1 tablespoon balsamic vinegar
- 1 cup milk (whole milk is best)
- 2 cups heavy cream
- 1 teaspoon vanilla extract
Mix together the cherries, 1/2 cup sugar, the lemon juice, and balsamic vinegar. Put this aside to allow the flavors to come together.
Drain the cherries, setting the liquid aside.
Divide the cherries in half. Take one half and puree them in a blender.
Using an electric mixer, beat together the milk and remaining 1/2 cup sugar, for about 2 minutes. You want the sugar to be completely dissolved.
To the milk mixture, add in the cherry juice, cream, pureed cherries, and vanilla.
Pour this cherry and milk mixture into your ice cream maker and following the machine’s instructions, freeze it for about 20 minutes. Add the rest of the cherries and freeze for 5 more minutes.
The ice cream will come out of the maker creamy and delicious! If you prefer it to be a bit harder, it will harden up in the freezer.
