One of our favorite family activities is to have picnics. This time of year, there is just one problem. It is REALLY hot. A few days ago I was trying to think of something we could do that would 1) be super fun and 2) something that was not hot.
Then it hit me! A Breakfast Picnic! Brilliant! I knew the girls would love it and I also knew it would not be as hot as an afternoon picnic. Perfect!
I woke up, fixed my favorite blueberry muffins, made a simple fruit salad and poured some chocolate milk in a couple of glass jars. Easy peasy! The fruit salad consisted of apples (with a few drops of lemon juice to keep from browning) and grapes. By placing the milk in glass jars, it made them easily portable without the worry of spilling in my bag/basket.
Blueberry Muffins
Adapted Real Simple
12 Mufins
Ingredients
2 Cups All-Purpose Flour
2 tsp Baking Powder
1/4 Tsp Salt
3/4 Cup Sugar
1/2 Cup Butter – Melted
1/2 Cup Milk
2 Eggs
1 – 1.5 Cups Blueberries
Directions
Preheat oven to 375 Degrees.
Line muffin pan with paper liners.
In a large bowl, whisk flour, baking powder and salt together.
In a medium bowl, whisk sugar, butter, milk and eggs until well combined.
Add flour mixture to liquid mixture until combined, do not over mix.
Gently fold in blueberries.
Divide batter among muffin cups.
Bake 20-25 minutes (I baked mine for 22 and they were perfect).
Allow to cool in pan for 5 minutes, serve warm.
If you do not plan to serve immediately, place on wire rack and allow to cool completely.
The best thing about Breakfast Picnics is the versatility of them. You can make them as easy as you want or as elaborate. Really, the possibilities are endless!

I sincerely love this idea- thanks! I like to take my boys on picnics often during the summer and they love them as well. We’ve been hit with a real heat wave here though and the other day my boys asked if we could have a picnic at the local park- I felt so bad that I had to tell them no due to the heat. What an awesome alternative! This will definitely be on our to-do list this week!
