This apple spinach salad is so easy to make and can be varied according to what ingredients you have on hand. Make your own dressing or add some of your favorite bottled dressing.
Simply toss one bag of baby spinach with 1 cup shredded carrot, 1 apple cored and sliced, and some Asian, balsamic, or apple vinaigrette dressing. What else could you add to it? Radishes, cucumbers, cherry tomatoes – there are so many options! Top with slivered almond, walnuts, or pecans. A nice addition to this is some raisins and/or some dried cranberries or pomegranate seeds. You can also turn it into a full meal with some protein – a chopped up hard boiled egg, some edamame, turkey or chicken, or even some tofu.
