12 Days of Christmas Desserts – Pumpkin Bars with Candied Pecan Topping

Wow – I can’t believe we’re on Day 7 already! There sure have been some amazing desserts shared so far and this one fits right in. We’re big pumpkin fans around here so this recipe is a must try for us.

Christmas is at the top of the list of Naomi’s favorite holiday!  She and her family love to visit Christmas displays and have visited many from Disneyland to Walt Disney World and in between.  The tree above was seen a few years ago at the El Tovar at the south rim of the Grand Canyon.  

Christmas is a time of togetherness for the family, and much of that time is spent cooking.  She loves to cook and bake up a storm with her daughter (if only her daughter would help with the dishes…) to make some of the family’s favorite dishes.  From turkey to sweet potatoes, the oven and stove are always kept busy most of the day.   
pumpkin-bars-recipeThis year, Naomi is trying something new.  Since she works in the medical field and has to work this Christmas, she is looking forward to makingHomemade Pumpkin Bars with Candied Pecan Topping.  This is on the menu this year because it is a simple recipe and can easily be made ahead and then topped with whipped topping and candied pecans at the last minute.  Not everyone in her house is a fan of pumpkin, so she will also be adding a peanut butter pie to make sure the kids are happy with the dessert options.  Do you have a picky eater in your house?  What type of desserts do they like for you to add to the menu?
